My pad thai!

Pad Thai is a traditional Thai dish consisting of rice noodles stir-fried with chicken, shrimp, green onions, garlic, ginger, eggs, peanuts, and bean sprouts. The sauce consists of a tamarind base, often accented with fish, oyster, and/or soy sauce. The flavor profile can vary, from relatively mild to accommodate Western taste, to relatively fermented if lots of fish and oyster sauce is used. In addition, pad thai is served with chopped peanuts, and sliced lime, and may also include other vegetables and spicy chilis.



Alternate proteins may be used such as tofu, either with or without chicken and shrimp. Because of this, there are many popular vegetarian variants of the dish. I use lots of oyster sauce in my recipe, as it deepens the overall flavor of the dish and provides a fermented contrast to the sweetness of the tamarind and lime. This is a personal favorite of mine, which I cook almost every week.
